Springtime Soup

The accurate, systematic, healing nature of Mother Earth comes to remind us that the cycle of life rotates once again. Moving towards spring we welcome all the treasures that Mother Earth has to offer us. We come closer to her, we spread loving vibrations towards her, we identify and collect her wisdom and with gratitude & our peaceful thoughts we prepare a green soup to specially welcome the greenest time of the year. Green is the color of love after all...the energy that regenerates life amongst us as well as Nature and the whole Universe.
Doris, this Month’s GreenAngel whom we kindly thank, shares with us a Special Green Soup Recipe:

Green Nine

Take one handful of all these herbs:

Dandelion (leaves), nettle (both fresh & dry), common sorrel, daisy ( leaves & flower), chickweed, mil-foil, buckhorn plantain, ground-ivy and only a little Bishop-Weed (ground elder).

You wash the herbs and cut them all
Fry them just a little in coconut oil ( or any other oil)
Fill in vegetable soup
Add salt & pepper
Cut 2 cooked potatoes and add them in
Mix all this in an electric mixer together with cream,
best is a Thermomixer, if not, you have to warm the soup afterwards in a pot.

Serve with whipped cream & some herbs on top or with the dandelion buds fried in butter.
All these herbs are growing in March in Europe in gardens and all around.
Best is to pluck them not near a street ( to much dust). You can vary according to local greenery.
