Spring Strawberry Pie

Each season comes with its gifts. One thing I ‘ve always enjoyed while observing the cycles of life from spring to summer, autumn & winter is the variety of the fruits that each season bears. Strawberries would not taste that good if they would always be available. So one thing one can appreciate most in life is actually …change. Sticking to the old and familiar means I am not able to taste the fresh fruit that life has to offer me.

Those who visit regularly local fruit & vegetable markets know that each fruit has its season. It is important to offer our body fruits & vegetables that grow in season. This way we benefit our body and at the same time it helps us keep ourselves aligned with the rhythms of nature which are our own rhythms in life as well, as much as we often find ourselves resisting to this. All comes & goes. The religion of nature is change. When we align ourselves with these biorhythms we can enjoy more happiness and harmony in life.

In the neighborhood of Kypseli (Beehive) just close to the citycenter of Athens is the organic fruit & vegetable market.

The recipe below is a spring inspiration, however you can experiment with any other seasonal fruit that inspires you.
Along with fresh ingredients while preparing the food we care to maintain our thoughts light as these leave their energy footprint in food.

Spring Strawberry Pie

160g oil (olive oil or sunflower oil)
1 cup raw sugar
2 cups whole wheat flour
2 tsp baking powder
3 tbsp corn starch
160ml soya milk (or any other vegetable milk)
ground vanilla
lemon zest
400g strawberries
icing sugar

Beat the oil and sugar. Dissolve the corn starch in the milk and add that to the previous mix. Add zest, flour sifted with baking powder and vanilla. Pour into pan and place over the sliced strawberries. Bake in preheated oven at 170degrees. When cool, sprinkle with icing sugar.
